Rainbow Asian Slaw

I like colorful food.

No, I don't mean Skittles, Starburst and Fruit Loops.

Okay, I do, but mostly I mean that I like some color in my meals. The fruits and veggie kind of color. In fact, the more colors there are in a dish, the more excited I am to eat it.

Truth: sometimes I add tomatoes or red bell peppers to my salads or pasta just because they are red.

You'd think the color alone, then, would be enough to make my happy about this Asian slaw. And it is. What pushes it from like to love, though, is the taste. It's goooood. Different and good. The dressing is light enough to let you taste the veggies in the slaw, but strong enough to add its own sesame and ginger flavor. It isn't too harsh or too sweet, and has just enough of each ingredient that they blend perfectly. It's simple to make; half of the prep work is opening a bag of broccoli slaw and matchstick carrots. That kind of prep work I can handle. It's great as a side dish but it also makes a good light lunch. Or second or third lunch, as the case has been with me lately.

It's one of those all-around winner recipes that you keep in your recipe box and make again and again.

Every time you want to taste the rainbow.

Ingredients

  • 1/4 cup unseasoned rice vinegar (not the seasoned kind or it will be too salty. Can substitute regular white vinegar but the dressing will have more of a harsh flavor)

Directions

  1. Make the dressing by combining all ingredients in medium bowl. Stir with a whisk until peanut butter is dissolved. Set aside.
  2. Combine all of the slaw ingredients in a large bowl. Add dressing and toss well. Let sit at least 10 minutes so vegetables have a chance to soak up the dressing. Taste and adjust seasoning if necessary. Serve cold.

Rosie Makes A Pineapple Casserole.

One of the casseroles I made for our Christmas Eve dinner and served again for our Christmas dinner was a pineapple casserole. I got the recipe from Maxine and it's simple, quick, and wonderfully delicious. I've blogged about it before, but I'm giving you the recipe again in case you missed it the first time. You really should try this some time. It's so very good. I halved the recipe when I made ours, but the recipe below is for the whole thing. My mise en place is halved.

Maxine's Pineapple Casserole

2 16 ounce cans pineapple chunks, drained
6 TB flour
1 cup sugar
2 cups cheddar cheese, grated
1 stick butter, melted
1 stick Ritz crackers, crushed
(Don't crush to uniform crumbs.
Leave different sized crumbs - large/medium/small.)
Put pineapple in 9 x 13 inch baking dish.
Mix sugar and flour.
Sprinkle evenly over pineapple.
Layer cheese, then crushed crackers over top.
Pour melted butter over dish.
Bake at 350 for 30 minutes.

I poured the drained pineapple into a nine-inch square buttered baking dish.
Mix the flour and sugar.
Sprinkle evenly over pineapple chunks.
Grated cheddar cheese on top.
Crumbly mixture of Ritz crackers.
Pour melted butter over top.
And bake 30 minutes at 350.
I'd love this with ice cream.

This is excellent with a ham. Heck. Please make it some time. You'll be glad you did. Plus, I'll bet that your first time will certainly not be your last.

With this easy pasta salad recipe, I challenge you to forget the box; forget the pre-made stuff at your deli grocer. You aren’t going to want it after you give this Bacon Tomato Avocado Pasta Salad a try.

The idea for this Bacon Tomato Avocado Pasta Salad comes from one of my favorite sandwiches: Bacon, Lettuce, Tomato and Avocado.

Sure the traditional BLT is great, but add some avocado and I’ll love you for life. What can I say? Avocados just do that to me.

I don’t think it’s too much of a stretch to say, I’m not alone in my love for avocados.

It really is quick, the whole thing comes together in the time it takes to boil the pasta. While, it’s great right away, if you let it chill for about 30 minutes, all the flavors have a chance to mingle.

Recipe: Banoffee "Danger" Pie

Do not adjust your sets - you haven't tuned into the wrong blog. Its still culinarily challenged me but this pie was so amazingly delish I had to share it. We had a chance encounter with its gooey yumminess in Africa. Luckily the camp manager was nice enough to share the recipe. I've made a few slight adjustments to account for American markets.

Meet Banoffe "Danger" Pie. Ban for banana + offee for toffee = Banoffe pie. If you are like me, you've never heard the term 'banoffee', no less tasted it. Non Americans are roling their eyes now as its nothing new but humor my astonishment - how has this dessert not won us Yankees over?

Why "danger"? Glad you asked. Danger is this pies middle name not only because is it tasty and calorically sinful but its also incredibly easy to make! A dangerous combination. If you are on a diet, avert your eyes.

Still with me? Lets get started. You will need:

  • 3 bananas
  • 1 tin of sweetened condensed milk
  • 2 cups whipping cream
  • 1 package of digestive biscuits or graham crackers
  • 1 stick of butter
  • 1 tsp vanilla
  • 1 small bar of chocolate

If you don't mind using store bought ingredients you can cut down a lot on the steps but since I was posting it I figured I would make a proper version entirely from scratch just for you.

Your first step can be done way ahead of time (at least hours but can be as much as months before). Remove the label on the condensed milk and submerge the unopened can in pot of water. Cover and boil for 2.5 hours. Warning: Be sure to keep the can covered by water at all times!!

After requisite time has passed, take pot off the stove and allow the can to cool. In case you're wondering - you just made magic, er, toffee!

So you're ready with your toffee, its time to do the rest.

To make the crust (*You can skip this step entirely by buying a ready made graham cracker crust.)

  • Grind up digestive cookies in food processor.
  • Melt stick of butter in microwave and pour into crumb mixture.
  • Blend until you have a moist sand mixture.
  • Smooth wet crumbs into pie plate to make a crust.
  • Bake at 350F for 10 minutes.
  • Set aside to cool.

To make whipped cream (*You can skip this step entirely by using cool whip. )

  • Whip cold cream and vanilla on high until whipped
  • Set aside

Now its time to bring it all together. Cut up bananas into slices and lay into your crust. It doesn't matter how you arrange them really. Just go wild.

Open toffee can, mix with knife until smooth, pour on bananas.

Spread whipped cream over the whole mess.

Grate chocolate on top (optional)
Put in fridge to set for at least 2 hours.

So there you have it. Yum in a pan. I dare you not to love it.

Slow Cooker Italian Turkey Meatballs

Slow Cooker Italian Turkey Meatballs

Step by Step

  1. In a large bowl, combine ground turkey, breadcrumbs, egg, parsley, garlic and cheese. Using clean hands, mix all the ingredients and form small meatballs, about 2 tablespoons each.
  2. In a small saute pan, heat olive oil over medium heat. Add garlic and saute until golden, being careful not to burn.
  3. Pour crushed tomatoes into the crock pot with bay leaf. Add garlic and oil.
  4. Drop meatballs into the sauce, cover and set slow cooker to low, 4 to 6 hours.

    When meatballs are ready, add salt and pepper to taste, and toss in some fresh basil or parsley or both!
  5. Makes about 24 meatballs, 2 tablespoons each. However, I was able to get more than 30 meatballs when I made it. I just put the extras in the freezer before cooking.
  6. Serve with mashed potatoes, over pasta, or enjoy it in a hoagie roll as a meatball sandwich. They're also good for breakfast - yes, they are that good!

Peach Tart

I know it’s not really time for peaches to be ready but I just couldn’t resist myself when I saw a few of the first fruits of season at the farmers market. I am so thankful that I live in a part of the country that produces this sweet, juicy fruit. North Carolina, South Carolina and Georgia all have their own unique varieties and it’s always so much fun to taste, cook and explore what makes each one special. I picked up a small basket of peaches on Saturday and let them get just ripe enough to bake with. So, today was the day and Peach Tart is what’s for dessert!

  3. I love the idea of pumpkin bowling. With the ridges and bumps, the pumpkins go everywhere, making it totally unpredictable and zany.
  4. I did a Halloween carnival for 3 years. Some other games I used:

    A trivia game with questions for several age groups. "What color is a witch's hat" for young ones, "Who is the bad guy in Friday the 13th" for older kids. If answered correctly, give a prize, if wrong, kid goes to back of line (except itty bitties, they get a pass).
    Monster house - piece of plywood painted as a house, several holes in it. Kids reach through to get a prize. Give several tricks before getting a prize. Squirt water on their hand, tickle with a feather, touch or grab them with a monster hand glove.
    Fortune Teller - Oriental Trading has fortune telling fish, which are red cellophane and shaped like fish. Child thinks of someone, you place the fish in their hand and it will curl up in different ways. "Read" the curl of the fish to tell how the child feels about that person. Instructions come with the fish.
    Shocking Photo - not for very young. Have child stand before a curtain for a picture. Have monster hands reach out while flash is going off. Hilarious photos!
    Scary reach box - reach into covered boxes labelled witches fingers (chicken bones), arachnaphobia (string hanging down), etc.

    Crafts are great, too. Beading works for many ages.

    A "pumpkin trail" trick-or-treat with costumed adults passing out candy at lit jack-o-lanterns.

    Box mazes are fun - prize at the end.

    Okay, that's a lot. I'll shut up now!
