If there were ever a day when food was more important than the big event, it’s the Super Bowl. Am I wrong? Families and friends around the country gather in someone’s basement to drink beer, watch the commercials, eat tasty finger foods and maybe catch a little football. I love football as much as the next girl but I feel like the big day ends up being more about the noshing and funny adverts than the actual game.

When I think of game day food it involves lots and lots of napkins. Football noshes are meant to be messy. Totally slightly indulgent and with out a lot of fuss. Like bar food only without the fryer and in my living room.

These turkey burger sliders look like way more work than they are. The beauty of these is that they can be made ahead. In fact, they are better if you make them ahead.

I’ve made variations of these the last three Super Bowls. It’s been my signature app that I bring to wherever we are watching the game. These might be my favorite. I think using turkey in place of the traditional ground chuck for the burger makes them feel slightly less naughty when you’re eating two or three. Which is not totally the case since they’re smothered in sharp white cheddar and wrapped in puff pastry but whatever, right? It’s the Super Bowl, live a little!

This turkey burger recipe is adapted from the Mar-a-Lago Burger made famous by Oprah Winfrey after she had it at Donald Trump’s Florida Resort. It uses lean ground turkey breast and is flavored with sauteed celery, apple, onion, garlic and gets a nice bite from mango chutney and some sriracha hot sauce.

I made a simple avocado aioli by putting 1/4 cup mayo, 1 small avocado, 1 garlic clove, about 1/2 lime, juiced, and a little salt in a blender and pulsing to combine. If that’s not your thing, good ol’ ketchup and mustard will be more than fine to serve alongside.

Puff Pastry wrapped Turkey Burger Sliders

Ingredients:

  • 1 tablespoon olive oil
  • 1/8 cup finely diced celery
  • 1/2- fuji apple finely diced
  • 2 scallions, finely diced
  • 1 clove garlic, minced
  • 1 lb ground turkey breast
  • 2 tablespoons mango chutney
  • 1-2 teaspoons sriracha sauce
  • 3 tablespoons minced fresh cilantro
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 4 oz sharp white cheddar cheese sliced about 1/8-inch thick
  • 12 oz puff pastry (1 & 1/2 sheets of standard pepperidge farm package)
  • 1 egg white mixed with 1 tablespoon water

Directions:

Preheat the oven to 400F degrees. Over medium heat, sauté the scallions, celery, apples and garlic in the olive oil until tender, about 5 minutes. Let cool. Place the ground turkey in a large mixing bowl. Add sautéed items, mango chutney, sriracha sauce, cilantro, salt and pepper, mixing lightly. Shape into 10-slider sized burgers. Heat a large non-stick frying pan over medium high heat. Lightly coat the pan with cooking spray. Sear the burgers 3-4 minutes each side, taking care not to cook the whole way through. Remove sliders from pan and put on a plate to cool while you prepare the puff pastry. On a lightly floured surface, unfold the pastry and roll out. Cut the pastry into 10 equal squares. Place 1 patty on each strip and top with cheese. Fold the pastry up around the burgers and pinch the edges together to seal, molding to fit around the patties. Brush the tops of the pastries with the egg mixture. Place the mini burgers on a baking sheet lined with parchment. Bake for 12 to 15 minutes or until puffed and golden. Let stand for 5 minutes before serving.

Grilled Prosciutto-Wrapped Asparagus

  • 24 medium asparagus spears, snapped
  • 8 sheet very thinly sliced prosciutto, cut in thirds lengthwise
  • 1 large garlic clove
  • ⅓ cup balsamic vinegar
  • 2 tablespoons Dijon mustard
  • ¼ teaspoon each Kosher salt and black pepper
  • ½ cup extra-virgin olive oil, plus extra for drizzling
  1. Make vinaigrette by whisking garlic, vinegar, mustard, and salt and pepper in a 2-cup Pyrex measuring cup. Slowly whisk in oil until you reach the 1-cup mark.
  2. Drizzle asparagus with olive oil and sprinkle with salt and pepper.
  3. Working one spear at a time, roll each one in a piece of prosciutto.
  4. Grill over direct heat on a charcoal or gas grill turning them only once until prosciutto is crisp and the asparagus are crisp-tender, 5 to 6 minutes.
  5. Arrange spears on each plate and drizzle with balsamic vinegar or vinaigrette. Serve immediately.

Apple Beer Cupcakes

So, who would have ever thought about putting beer in cupcakes? ME!

I am more of a cocktail person than a wine or beer gal. But, I do enjoy all three libations. Like most women, I like just about any cocktail or alcoholic beverage that is sweet. I strongly detest red wine (I’m trying to find some appreciation for it); I don’t like my liquor straight (burns a hole in my heart); and I can’t stand dry wine ( I honestly don’t know why people will drink something that will make them thirsty). My favorite cocktails are Grey Goose and Cranberry and Amaretto Sours; my favorite wines are Chateau St. Michelle Riesling and just about any types of Moscato; and my favorite beers are Strongbow and ANGRY APPLE ORCHARD (which is technically cider but with alcohol. I just like calling it beer)!!! OM freaking G is this stuff good. I had it for the first time a few weeks back when my friend was having a get together at a sports bar and she was drinking a glass. She knew that I would love it and I would not disagree with her after I tasted it. So, I ordered a tall glass of this incredible orchard goodness and a big plate of nachos ( I told you I like man food). It was fantastic! It doesn’t even taste like beer. It tastes like apple cider but with fizz. Me love it long time! I thought how it would taste if I were to add it to something that was already sweet and “applely” that is when these Apple Beer Cupcakes were born.

At first I was going to make an apple float, sort of like a root beer float but with chunks of apple ( I still might do that) and see how it were to come out. I decided on cupcakes instead. I don’t know why, how, or where this idea came from but I’m glad it did. I took a basic cupcake recipe and added some shredded Golden Delicious apples and added some of this delicious beer and made an easy cream cheese frosting and they came out beautifully. The cupcakes don’t taste, AT ALL, like they have beer in them. In fact, I was wondering why add the beer at all. But the beer does deepen the apple flavor of the cupcakes and adds a but more moisture, I think.

If you decided to try this with any other apple flavored beer, I am not sure if you would get the same result. I’m sure that it will be fine, but I can’t say that with absolute certainty. I think you should try Angry Apple Orchard anyway! It is a perfect beer for the fall and it is a perfect beer to make these cupcakes with. Until the next crazy cupcake invention….PEACE OUT!

Adding Angry Orchard Apple Beer to your cupcakes enhances the flavor of these moist and delicious cupcakes. Topped off with a creamy cream cheese frosting, drizzled in maple syrup, and topped off with pecan pieces makes these cupcakes great for the fall.

  • 2 sticks unsalted butter, softened
  • 2 tsp. baking powder
  • ½ tsp. salt
  • 3 eggs, room temperature
  • 2 c. shredded apples (2 Golden Delicious Apples, preferably)
  • 1 c. Angry Orchard Beer, Apple Crisp
  • ¼ c. milk
  • 2 tsp. cinnamon
  • ½ tsp. nutmeg
  • 2 tsp. vanilla extract
  • maple syrup and pecan pieces for garnish
  • FROSTING
  • 4 oz. cream cheese, softened
  • 1 stick unsalted butter
  • 4 c. powdered sugar
  • 1 tbsp. heavy cream or milk
  • ½ tsp. cinnamon
  • 1 tsp. vanilla
  • pinch of salt
  1. Preheat oven to 350 Degrees
  2. In a large bowl, beat together the butter and sugar until light and fluffy. Add the eggs one at a time to make sure that they are well incorporated.
  3. Add the flour, baking powder, salt, cinnamon, and nutmeg. Now add the vanilla extract milk, and very slowly, pour in the beer while the mixer is still blending.
  4. Once you shred the apples, place the apple shreds inside a clean kitchen towel and ring the juice into a cup for you to drink later (smiles). Fold the shredded apples into the cupcake batter.
  5. Line two cupcake pans with cupcake papers and use an ice cream scoop to scoop some of the batter in each cupcake paper. Bake for 15 to 18 minutes. Allow to cool before icing.
  6. For the icing: Beat together the cream cheese and butter until well mixed. Slowly add the powdered sugar a cup at a time making sure that each cup gets well mixed making a thick and smooth frosting. Add the cinnamon, vanilla, and salt and mix once more and spread or pipe onto your cupcakes. Drizzle with maple syrup and top off with pecan pieces if you would like.

All-time Favorite Camping Food – Hobo Tin-Foil Meals

These easy camping meal ideas are true to the spirit of good ol’ campfire cooking, but without all the muss and fuss of a lot of work. Everyone wants to enjoy good camp food, but why should you get stuck doing all the cooking?

Kids love these because they get to feel like big kids – making their own food. And camp cooks love them because they are a lot less work than traditional camping meals.

The concept:
An assortment of foods are wrapped in foil and cooked in campfire coals – or on a grate over the coals – or even over charcoal briquettes in a grill. One good feature of these meals is the camp cook can get by with just prepping and laying out the camp food for the meals – then each camper creates, wraps, and cooks their own meal.

The plus:
With just a little adult help, you can let the kids create their own foil packs. And – they are cooked in an open campfire. Just like all good camping meals should be.

How it’s done:
The original foil meal, was a Boy Scout creation that was just; some hamburger, diced potatoes, corn, peas, and carrots, and a little salt & pepper, wrapped into a pack using a double layer of heavy-duty tin-foil.

Cooking Tips

  • Generally these meals don’t use specific recipes; you just decide what you want to include – and toss in.
  • Be generous with the seasonings.
  • Seal foil packs with foil folds – not just “crunched” closed.
  • Save the frustration of split packs – use heavy-duty foil
  • Set foil packs in mature coals – not flaming coals.

Ingredients: – per meal

  • 1/3 to 1/2 lb hamburger
    • use 85/15 hamburger, (you want the fat juices)
    • crumbled works best – but lumps can also be used
  • 4 – 5 whole cabbage leaves
  • 1 cup diced “HashBrown potatoes, (like Orieda Frozen Hash Browns)
    • Frozen hashbrowns do not have to be kept in your camp cooler
  • 1/2 cup each; frozen corn and peas
  • 1 whole carrot – sliced approx. 1/4″ thick
  • Montreal Steak seasoning, Salt & pepper – generous, but to taste
  • 1 tbsp. butter or margarine

Note: Other vegetables can be added, (or substituted), ie. onions, sweet peppers, or green beans. Fresh is best, but frozen works fine. Tip: 1 tbsp. of Worcestershire sauce really boosts the meat flavor.

Start with a double layer of cabbage leaves, (as shown in video), then the frozen and fresh veggies, followed with the hamburger, followed with the Montreal Steak Seasoning, salt & pepper, (seasoned to taste), and butter. Then complete the package by topping with more cabbage leaves, (as seen in video)

Place completed foil pack on mature coals, (not in or over open flames, or still-flaming coals – the food will burn), for 25-30 minutes.

Tip: A good pair of campfire gloves is almost a must-have for campfire and tin-foil cooking.

Campfire Cooking Grills

A campfire cooking grill is one of the handiest, (and least expensive), pieces of camping gear you can have. And it doesn’t have to be a 30-pound cast iron monster either.

A folding grill grate like the pictured Coleman model works great, isn’t too heavy, and takes up very little space. Even when your camp site fire-ring has a grill you will still find yourself using this one too!
