Avocado Cilantro Lime Rice

Are you tired of the same old Mexican rice? I know I’m getting a little bored of mine because I make it with nearly every Mexican meal, so I decided to switch things up a bit. This recipe could also be called guacamole rice because it tastes just like so. I love it though because I always find myself dolloping a generous amount of guacamole over my Mexican rice all the time.

Aren’t we all always on the lookout for a quick and easy, healthy lunch, one that isn’t boring. This rice is just what I’ve been looking for. It begins with brown rice, then it’s covered in a creamy avocado, vibrant cilantro and a zesty lime mixture. It requires minimal ingredients but together they create something completely delicious! Really though, if you say the word avocado, I’m in. I just love avocados! Lately I’ve just been mashing them up and slathering them on my toast in place of butter and surprisingly enough it tastes incredibly good. I think it’s safe to say they are one of the worlds best ingredients.

Healthy lunch or appetizer, look no further. This one you’ve got to try!

Toasted Butter Pecan Cake

Toasted Butter Pecan Cake

Ingredients

  • 2 tablespoons plus 1 cup softened butter, divided
  • 2-2/3 cups chopped pecans
  • 2 cups sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup 2% milk
  • 11 ounces cream cheese, softened
  • 2/3 cup butter, softened
  • 6-1/2 cups confectioners' sugar
  • 1-1/2 teaspoons vanilla extract
  • 1 to 2 tablespoons 2% milk

Directions

  • Preheat oven to 350°. In a small heavy skillet, heat 2 tablespoons butter over medium heat. Add pecans; cook until toasted, about 4 minutes. Cool.
  • Cream sugar and remaining butter until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, baking powder and salt; add to creamed mixture alternately with milk. Beat just until combined. Fold in 2 cups pecans, reserving remainder.
  • Spread batter evenly into three greased and waxed paper-lined 9-in. round pans. Bake until a toothpick inserted in center comes out clean, 25-30 minutes. Cool 10 minutes before removing from pans to wire racks to cool completely.
  • For frosting, beat cream cheese, butter, confectioners' sugar and vanilla until smooth. Beat in enough milk to achieve spreading consistency. Spread frosting between layers and over top and sides of cake. Sprinkle with remaining pecans. Refrigerate.

1 slice: 786 calories, 43g fat (19g saturated fat), 130mg cholesterol, 351mg sodium, 96g carbohydrate (72g sugars, 3g fiber), 8g protein.

  • This is now one of my favorite Cakes & will be my go to one, I made it for our Church Social & it was a huge hit. I did alter the recipe a bit. I used 4 cake pans & cut them into & made a 8 Layer Cake, I roasted 4 cups of Pecans in 4 Tablespoons of Butter, I put 2 cups in the Batter as per directions & 2 cups Mixed in the Icing, I used 2 Packages of Cream Cheese & 2 Sticks Butter, 7 cups of Sifted Confectioners' Sugar, 2. Teaspoons Vanilla Extract, 3 Tablespoons 2% Milk. I had several people ask for the recipe...

  • I don't often take the time to write reviews, but this one deserves compliments. It is one of my families favorite desserts and I save it for special occasions, Easter, for instance, because I don't want them to get too used to it...that's how good it is. Really truly delicious, the frosting pairs perfectly with the rich, moist cake. I can't say enough good things about it: Try it, you won't regret it!

  • This was a delicious cake! It was a nice change from the usual desserts I make when company comes around. This cake feeds many! And, for those of you concerned about the calories, I was too. But, I cut my cake into 20 pieces! That lowered the calorie count down to 471 calories, which is still a lot. This is a sometimes-cake as I like to call it! :) Delicious!

Recipe: chicken wild rice soup in a crock pot

Chicken Wild Rice Soup

This recipe makes a lot of soup. I use a 5 quart crock pot (a no-frills oval-shaped one we received for a wedding present 12 years ago). Adjust accordingly if your pot is smaller:

Crock pot chicken and wild rice soup
4 chicken thighs
1 onion, chopped
6 carrots
1 1/2 c. wild rice
1 tsp each of dried oregano, basil, parsley
1 pint heavy cream
salt and pepper to taste

Early in the morning, place the chicken and onion in the bottom of the crock pot. Fill with filtered water, leaving an inch or two at the top. Add a splash of vinegar. Set the crock pot on low or “auto” and leave it for 8-10 hours.

When you get home from work, pull out the chicken and set it on a plate to cool for a bit. Add peeled, sliced carrots, wild rice, and spices. Remove the meat from the bones and return it to the pot. Cover it and let it cook another 60-90 minutes or until the wild rice is done. The wild rice could be parboiled or soaked ahead of time to shorten this second cook time substantially.

When the wild rice splits open, turn off the crock pot. Stir in salt and pepper to taste, then stir in the pint of cream. If you use a 5 quart crock pot, this recipe makes A LOT—a good 10-12 servings. I always make big soup recipes, freeze the leftovers in pint jars, and take them to work for lunch. I know you’re technically not supposed to freeze cream soups, but I thought this one was still great after being frozen.

This soup is very simple. But as one of my favorite cookbook authors says, 90% of good cooking is good shopping (or good gardening). I used meaty free-range chicken thighs, Minnesota wild rice, herbs from my own garden, and the best cream a person can buy in the Twin Cities. Quality makes a HUGE difference. You don’t have to choose recipes with 15 hard-to-find harder-to-pronounce ingredients to serve up a satisfying, nutritious, spectacular meal. This soup really brought that concept home for us.

My initial interest in grass-based dairy and meat grew from reading how much more nutritious they are (3.5MB PDF). Now I’m completely hooked on the taste as well. Homemade soup in a jar—your hipster co-workers will be impressed/jealous.

I first became acquainted with Amaretto when I lived in Australia. My husband and I were young, entertained often and went out to eat several times a week. Liqueurs were popular as after dinner drinks in restaurants there and we enjoyed trying a lot of different ones.

Since I love the last of almonds, and smell of anything cooked with them, I fell in love with Amaretto. It is the perfect addition to this Cuban Breeze.

The drink could not be easier. Just add vodka and amaretto over ice and top with pineapple juice.

Cheesy Garlic Baked Chicken Recipe

1 Preheat oven to 375°F and line a casserole dish (I used this one) with tin foil this will help with the clean up afterwards lightly grease it.
2 In small sauté pan, sauté garlic with the oil until tender.
3 Remove from heat and stir in brown sugar & a teaspoon of salt
4 Place chicken breasts in a prepared baking dish and cover with ¾ of the garlic and brown sugar mixture.
5 Add salt and pepper to taste.
6 Bake uncovered for 30 minutes.

Within the last 10 minutes before removing it out of the oven put your cheese on top then put the remaining brown sugar and garlic mixture on top of the cheese and let bake 10 minutes or until cheese is fully melted.

Green smoothies helped us beat diabetes

I do NOT want to sound like a cheezy televangelist or some hawker on late night infomercials or some vapid chick selling makeup at 2 am on channel 19,000

BUT I can attest that, using green smoothies like the one on one of my other blogs here (no sprouts tho, no bananas either) – NOT juicing but Vita-mixing (this way you get all the awesome fiber you NEED)

My DH has:

– Lost all blood and urine chemistry markers for diabetes
– Gone off ALL diabetes meds (wasnt on insulin yet)
– Gone off high blood pressure meds
– Gone off some other med he was on for cholesterol
– Lost something like 50 pounds
– Lowered all his bad fats and cholesterol in his blood to BELOW the lower end of normal scales – ALL OF THE USUAL TRIGLYCERIDE PANEL – whooosh from bad to awesomeness!!!!

IN 4 MONTHS

We have proven that you can, single handedly, monkey-wrench the pharmaceutical companies AND make your life SO MUCH BETTER just but making these green smoothies. You can add a simple leafy green salad with a low sugar low fat HOMEMADE vinaigrette if you need to chomp on things.

Drink these every day and stick to it and you WILL see massive gains against diabetes ad all the nasty side effects of diabetes and metabolic syndrome – I watched it happen.

This is NOT a diet, its food therapy. You are recharging your nutrient (not calorie) starved body with critically important vitamins, minerals, cofactors science hasnt learned about yet, rebuilding your neglected gut ecology, and enjoying fresh juicy goodness that will make you feel more energetic and juicy yourself!

Our green smoothie recipe is the following – yours can be different just watch the sugar, starch, dairy products, fats

ALL ORGANIC (crap in, crap out – this is an investment in YOU so you dont have to wake up feeling like a freight train ran you over every 3 minutes all night long)

This is for one day, its thick, like a shake and you can sip it with a straw to make it easier or dilute as you like with filtered water (I have been using water filtered with our nifty Brita pitcher)

This is in the order that i add to the blender

small amount of filtered water to lubricate
3 carrots
1 medium apple
1 peeled cucumber
1 peeled orange
2 stalks celery
slice of ginger
1/8 lemon with peel
handful baby spinach
splash triple distilled cod liver oil
1/4 cup hemp protein powder
1/4 cup raw maca root powder
2 cups dinosaur kale (any kind you like)
cup cilantro or flat leaf parsley or both
1/2 small head of lettuce (red, romaine, oak leaf, up to you)
more cool filtered water to bring whirling smoothie to near top of the blender

Store in a 1/2 gallon container in the fridge – dont store longer than for that day’s use. Rinse the container once done so nothing begins to stick to container – best not to let it dry onto surface.

We sometimes add beets or freshly cut pineapple… blueberries or other berries would be awesome – just be sure its all organic – berries can be seriously chemically treated if not organic.
